I picked up 15 lbs of #2 (lightly bruised) sun gold peaches from Deterring Orchards today and made some luscious peach nectar with my Mehu-Liisa steam juicer from Finland. Here’s how I did it:
The #2 fruit had a few bruises and some were funny shaped, but hey, none of that matters when you are steam juicing. In fact, in past years I have picked up drops (windfall fruit) at significant savings. Unfortunately, the orchard does not allow that anymore.
First, as always, I assembled my canning gear, cleaned some quart jars, and boiled my lids for 5 minutes (I leave the lids in the hot water and set aside till needed).
Then I sliced the peaches up into the basket (8lbs in all). No need to peel. I quartered the fruit and pulled out the pits because I wanted to make fruit spread from the pulp later (see future post). Then I assembled the juicer and set the timer to 30 minutes.
After 30 minutes, I check the juice level and draw off a quart to avoid having the juice spill over into the steam funnel. These were juicy peaches! Then I set the timer to another 30 minutes.
The result: 3.5 quarts of rich, luscious peach nectar from 8 lbs of fruit. Now to make jelly, syrup, and fruit spread!
