Mock Maraschino Cherries with Juice from the Mehu-Liisa Steam Juicer

The other day I juiced a batch of Bing cherries in my Mehu-Liisa steam juicer. After processing, I picked out the nicest looking spent cherries (with and without stems) to make mock Maraschino cherries to enjoy later on ice cream and in cocktails. Here’s how I did it:

First, I picked out the best looking spent cherries from the steam basket after they had cooled down a bit after processing. I picked out some with stems and some without and divided them into two bowls.

Next, I added 1 cup of Luxardo Maraschino cherry liquor to 1 cup of Bing cherry juice from the Mehu-Liisa steam juicer.

I packed two pint jars-one with stemmed fruit, the other without-and filled with the juice/liquor mixture to one inch of the top. Then I topped off with Luxardo to 1/2 inch of the rim.

I’ll let those cherries sit in the fridge for at least a week before I use them. They will be soft and juicy and boozy. Remember, they still have the pip inside! Enjoy!
